In 2025, our English Heather Honey was awarded 3 stars at the Great Taste Awards, recognised by the Guild of Fine Food as an extraordinary product. To supply authentic moorland heather honey while keeping our own bees based in their home apiaries in Warwickshire, we collaborate with a close bee farming friend in Yorkshire who produces this harvest for us.

With its natural jelly-like texture, this honey is delicious spooned over warm toast and crumpets, paired with artisan cheeses, or used in savoury marinades and glazes. Prefer a milder, pourable honey? Explore our English Summer Honey, or try our English Borage Honey. You can also learn more about our harvesting methods by visiting our English Honey FAQ page.

The Character of English Heather Honey

Harvested in late August from the wild upland moors of Yorkshire, English Heather Honey is dominated by nectar from ling heather (Calluna vulgaris). Amber-bronze in colour and naturally jelly-like, it offers a robust, aromatic profile that stands apart from lowland blossom honeys.

Wild Moorland Terroir

The distinctive character of ling heather shaped by upland landscapes:

  • Late-Summer Flow: Gathered in late August when ling heather blooms across the moors, providing the final major harvest of the British season.
  • Aromatic & Savoury Notes: Delivers an earthy, full-bodied flavour with warm caramel notes and subtle herbal, smoky undertones.
  • Yorkshire Partnership: Produced in partnership with a close bee farming friend based on the Yorkshire moors.
  • Great Taste 3-Star Award: Awarded 3 stars at the 2025 Great Taste Awards, recognised for its exceptional flavour and texture.

Natural Jelly Consistency (Thixotropy)

A natural physical property characteristic of ling heather honey:

  • Gel at Rest: Ling heather honey is naturally thixotropic—it rests as a soft, spoonable gel inside the jar, but temporarily turns liquid and pourable when stirred or spread.
  • Suspended Air Bubbles: Due to its thick gel consistency, tiny air bubbles trapped during extraction remain suspended naturally throughout the jar.
  • Careful Extraction: Because it does not flow freely like liquid honey, it is traditionally loosened before spinning or carefully pressed from the comb.
  • Unpasteurised: Coarsely strained without high-heat pasteurisation, preserving its natural pollens and complex flavours.

Comparing Varietals & Culinary Uses

Heather Honey vs. Wildflower Honey

How moorland heather contrasts with classic lowland honey:

  • Flavour: Lowland wildflower honeys (like Summer Honey) are traditionally sweet and floral; Heather Honey is aromatic, robust, and slightly savoury with a lingering finish.
  • Consistency: Wildflower honeys pour as a liquid or set into a smooth spread; Heather Honey rests as a soft, spoonable gel.
  • Appearance: Rich amber-bronze with a slight reddish warmth and suspended micro-bubbles.
  • Kitchen Use: Ideal for bold cheese pairings, game roasts, and connoisseur tasting, while wildflower honey suits everyday sweetening.

Kitchen & Cheese Board Pairings

The complex, savoury notes of heather honey pair naturally with bold ingredients:

  • Artisan Cheese Boards: Outstanding paired with strong blue cheeses like Stilton, mature farmstead cheddars, and tangy goat's cheese.
  • Morning Oatmeal: Spooned into warm pinhead oatmeal porridge or thick natural yoghurt.
  • Roast Glazes: Creates rich, savoury glazes for roast pork, duck breast, sausages, or roasted root vegetables.
  • Warm Drinks: Adds robust flavour to traditional winter hot toddies or spiced ciders.

Frequently Asked Questions About English Heather Honey

Find answers regarding ling heather, gel texture, and extraction:

Why is Heather Honey jelly-like rather than runny (thixotropic)?

Ling heather honey (Calluna vulgaris) naturally contains botanical proteins that cause it to form a soft gel at rest. This property is known as thixotropy. When stirred or spread with a knife, the honey temporarily liquefies, returning to its firm, jelly-like consistency once left still.

Why does Heather Honey contain tiny suspended bubbles?

Because ling heather honey is naturally thick and gelatinous, small air bubbles become trapped during the mechanical extraction or pressing process. As the honey settles back into its natural gel state, these tiny bubbles remain suspended throughout the jar.

What is the difference between Ling Heather and Bell Heather honey?

Bell Heather (Erica cinerea) flowers earlier in summer and produces a traditional dark, liquid reddish-amber honey with a sweet flavour. Ling Heather (Calluna vulgaris) flowers in late August across the high moors, producing the famous thixotropic, aromatic jelly honey with smoky, herbal undertones.

Why is Heather Honey often more expensive than blossom honey?

Heather honey is a seasonal, labour-intensive crop. Upland moors are subject to unpredictable late-summer weather that can limit foraging flights. In addition, its thick gel consistency requires specialised loosening or pressing equipment to extract, resulting in smaller, highly prized harvests.

How should I store English Heather Honey?

Store your jar in a dry cupboard at normal room temperature with the lid firmly sealed. Do not store honey in the refrigerator, as cool temperatures can encourage premature crystallisation within the gel structure.
