In spring, the honey is light and floral from oilseed rape, dandelion, and hawthorn. In summer, it becomes darker and richer from lime, clover, and bramble. We choose not to label our honey as “raw” because the term isn’t legally defined in the UK and can be misleading under Trading Standards regulations. Our honey is pure, natural, and unpasteurised, only ever gently warmed during extraction and bottling to help it flow. Crystallisation is a completely natural process that happens to all pure, unpasteurised honey over time. It simply means that the natural sugars have started to form tiny crystals. The speed of setting depends on the nectar source — spring honey sets quickly, while summer honey remains runny for longer. Crystallised honey is perfectly good to eat and even easier to spread. To return it to a liquid state, just place the jar in a bowl of warm water.
