Spring bees mostly forage the blossom of fruit trees, OSR, sycamore, hawthorn and hedges, dandelion, beans & berries, producing a multi-floral honey with a flavour unique to each batch.
Natural runny honey will set over time, spring honey usually faster than summer. If the honey starts to set, simply place the jar in warm water until it becomes runny again.
Store honey at room temperature, never in the fridge as this will speed up the setting process and set the honey solid.
