English Honey

All of our pure Spring, Summer, and Soft Set English honey is extracted from our own hives across the Warwickshire, Leicestershire, and West Midlands countryside. As dedicated bee farmers, we select apiary locations that offer a wide variety of pollen and nectar for our bees, allowing us to bottle small batches that reflect the changing seasons.

To bring you regional varieties like English Borage and British Heather honey, we collaborate with a select network of trusted British bee farmers. This collaborative approach allows us to offer distinct regional flavours without the need to transport our own hives hundreds of miles, helping to reduce our carbon footprint while supporting other sustainable British apiaries.

Wholesale & Bulk Honey Supply

We also offer wholesale discounted jars of English honey for shops that would like to stock for resale, and supply other beekeepers and honey packers with bulk honey in 20KG buckets and 300KG drums ready to be bottled (minimum quantities apply). 100% British Honey: Hive to Jar

Our English honey is handled carefully to preserve its natural character and regional forage profile. From comb extraction to bottling in our Warwickshire honey house, every jar reflects honest bee farming at its finest.

Gently Warmed & Coarsely Strained

How we handle our honey to preserve its natural state:

  • Temperature Controlled: We only gently warm our honey to natural hive temperatures (max 35°C) so it flows through our honey house, avoiding the high-heat flash pasteurisation used by some commercial packers.
  • Coarsely Strained: Passed through coarse filters to remove stray bits of beeswax cappings while allowing the natural wildflower pollen grains to remain in the honey.
  • Unpasteurised: Handled with care to ensure the honey remains in its raw, unpasteurised state, preserving its delicate aromatic notes and distinctive floral bouquet.

100% British Traceability

We guarantee complete transparency regarding where your honey comes from:

  • Our Own Hives: Our core Spring, Summer, and Soft Set honeys are harvested directly from our own managed apiaries across Warwickshire, Leicestershire, and the West Midlands.
  • Trusted British Partners: Regional varietals like Yorkshire Heather and English Borage are produced alongside trusted UK bee farming colleagues.
  • Zero Blending: Every jar is 100% British. We never blend our honey with imported syrups or out-of-country harvests.

Understanding Crystallisation & Terroir

Understanding Crystallisation

A natural characteristic of unpasteurised honey:

  • A Natural Process: Unpasteurised honey naturally crystallises over time as glucose separates from fructose. This is a normal physical process, not a sign that the honey has "gone bad".
  • Sugar Balance: Honeys with naturally higher glucose (like Spring Blossom) set much quicker, while high-fructose honeys (like Borage) remain liquid for longer.
  • How to Soften It: If your honey sets and you prefer it runny, simply place the glass jar in a bowl of warm water (under 40°C) and stir gently until clear again.

Seasonal British Forage

Distinct harvest flavours shaped by the English countryside:

  • Spring Blossom: Gathered from early forage including hawthorn and fruit orchards; naturally forms a fine, pale set.
  • Summer Wildflower: Features diverse forage like bramble and clover for a rounded, golden floral sweetness.
  • English Borage: A distinctive pale, water-clear honey with a delicate profile and highly subtle floral finish.
  • British Heather: A highly aromatic, jelly-like honey with warm, smoky undertones harvested from moorland ling.

Frequently Asked Questions About Pure English Honey

Find answers to common questions about honey processing, crystallisation, and storage:

Is your English honey considered "raw"?

While the term "raw" has no statutory legal definition under UK honey regulations, our honey is unpasteurised and coarsely strained. We only gently warm our honey to natural hive temperatures (max 35°C) so it can flow through our equipment. It retains its natural pollens and unadulterated flavours exactly as the bees created them.

Why has my honey gone solid or cloudy?

Crystallisation is a natural process for unpasteurised honey. Raw honey consists primarily of natural glucose and fructose sugars; honey with a higher glucose ratio naturally sets faster as the sugars crystallise. It maintains its smooth, spreadable texture and is completely safe to eat. If you prefer runny honey, gently warm the jar in a bowl of warm water.

What is the difference between Runny and Soft Set honey?

Runny honey is pure honey in its liquid state, ideal for drizzling over porridge or yoghurt. Soft Set honey is pure honey that has been gently stirred during the natural crystallisation process using fine seed crystals, creating a velvety, buttery texture that spreads smoothly on toast without dripping.

How should I store my pure honey?

Store your honey in a cool, dry place at stable room temperature with the lid tightly sealed. Avoid storing honey in the refrigerator, as cool temperatures will significantly speed up the natural crystallisation process.
