Soft set or ‘creamed honey’ will contain spring or summer foraged honey. The creaming process creates a pale coloured multi-floral honey with a flavour unique to each batch.
Natural runny honey will set in time, some honey faster than others. Soft set and clear honey have the same flavours; however, soft set has a smooth spreadable texture that won’t run off your spoon as quickly.
Store honey at room temperature, never in the fridge as this will set the honey solid.
